Olan is a wholesome Indian vegetable dish cooked with traditional spices and fresh ingredients. This healthy vegetarian preparation is a family staple that supports clean eats and balanced nutrition.
Peel and dice the ash gourd into 1-inch pieces. Set aside.
In a deep pan over medium heat, add the ash gourd, cowpeas, green chilies, curry leaves, and enough water to just cover the vegetables. Simmer until the gourd becomes translucent but not mushy, about 10–12 minutes.
Gently pour in the coconut milk and season with salt. Lower the heat to prevent boiling, allowing the flavors to meld without breaking the coconut milk.
Cook for 5–7 more minutes, stirring occasionally, until the mixture thickens just slightly and the ash gourd is fully tender but holds its shape.
Turn off the heat. Drizzle the coconut oil over the top and give a gentle stir; cover and let it rest for 5 minutes before serving to enhance the aroma.
