In a medium saucepan, whisk masa harina with 2 cups of water over medium heat until smooth and no lumps remain. Bring to a gentle simmer, stirring frequently to avoid clumping.
Add milk gradually, whisking constantly to blend and prevent scorching. Heat the mixture until steaming but do not allow it to boil.
Stir in the chopped Mexican chocolate, piloncillo, ground cinnamon, and salt. Reduce heat to low to ensure gentle melting.
