Golden curry chicken spring rolls with spiced chicken filling are a flavorful appetizer. A high protein chicken recipe perfect for family gatherings.
Dice the chicken breast into small pieces and finely chop the onion, carrot, and green onion for an even mixture.
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add chicken pieces and sauté until almost cooked through, 3–4 minutes.
Add the onion, carrot, and green onion. Sauté 2–3 minutes until vegetables begin to soften but still retain texture.
Stir in curry powder, soy sauce, salt, and black pepper. Mix well, cooking for 1 more minute until the spices are fragrant. Remove from cent and let the filling cool to room temperature.
Place about 2 tablespoons of filling onto each spring roll wrapper. Roll tightly, sealing the edge with a dab of water.
Brush each spring roll lightly with remaining olive oil. Arrange on a baking sheet and bake in a preheated oven at 400°F for 18–20 minutes, turning halfway, until golden and crisp.
