Trim and finely chop the green beans into small pieces for even cooking.
Heat the vegetable oil in a large skillet over medium heat. Add mustard seeds; when they splutter, add urad dal and sauté until golden brown.
Add the curry leaves and sliced green chili, followed immediately by the chopped onion, and sauté for 1-2 minutes until onions are soft.
Stir in the chopped green beans, turmeric powder, and salt. Mix well, then cover and cook on medium-low heat for 10-12 minutes, stirring occasionally so beans cook evenly but stay crisp-tender.
Uncover, increase the heat to medium, and add the fresh grated coconut. Toss well, cook for another 1 minute to combine, then remove from heat and serve hot.
