Pat the fish fillets dry, cut into bite-sized pieces, and set aside.
Heat vegetable oil in a wide skillet over medium heat; add curry leaves and sauté for 30 seconds until aromatic.
Add chopped onion, cook for 3-4 minutes on medium heat until soft and translucent. Stir in minced garlic and grated ginger, sauté for 1 minute.
Add chopped tomato, turmeric powder, coriander powder, red chili powder, black pepper, and salt. Cook on medium-low heat for 5 minutes until the tomatoes break down.
