Pat the turkey breast dry with paper towels to ensure crispness when roasting.

In a small bowl, combine salt, pepper, garlic powder, thyme, rosemary, and onion powder. Rub the seasoning mixture generously all over the turkey breast, including under any loosened skin.
Place turkey breast on a rack in a roasting pan. Roast uncovered for 55–70 minutes, until an internal thermometer inserted in the thickest part shows 160°F.
Remove from oven, tent loosely with foil, and rest for at least 10 minutes. Slice against the grain and serve.
