Creamy spinach artichoke chicken casserole bakes tender chicken in a rich, cheesy spinach and artichoke sauce. This high protein, family-friendly chicken dish brings the flavors of the beloved dip into a satisfying dinner.
Preheat oven to 375°F. Grease a large casserole dish with olive oil.
In a skillet over medium heat, add 1 tbsp olive oil. Sauté garlic until fragrant, about 1 minute. Add spinach and cook, stirring, until wilted (2-3 minutes). Remove from heat.
In a large bowl, combine softened cream cheese, sour cream, 1 cup mozzarella, 0.5 cup Parmesan, salt, and black pepper. Mix until well blended.
Stir chopped artichoke hearts and sautéed spinach mixture into the cheese blend until evenly distributed.
Place chicken breasts in the prepared casserole dish. Spread the creamy spinach artichoke mixture evenly over the chicken.
Sprinkle remaining 0.5 cup mozzarella and 0.25 cup Parmesan on top. Drizzle the remaining 1 tbsp olive oil over the cheese layer.
Cover with foil and bake for 25 minutes, then remove foil and bake another 20 minutes until the cheese is golden and bubbly and chicken is cooked through (165°F internal). Let rest 5 minutes before serving.
