Cut the whole wheat bread slices into bite-sized cubes and set aside while prepping the other ingredients.
Heat 1 tbsp oil in a large non-stick skillet over medium heat. Add mustard seeds and cumin seeds; let them splutter for 20–30 seconds.
Add chopped onion, green chili, and carrot. Sauté for 2–3 minutes on medium heat until softened, stirring occasionally.
Add tomato and green bell pepper. Sprinkle in turmeric powder, red chili powder, and salt. Cook for another 2–3 minutes, until vegetables are just tender and moisture is mostly evaporated.
Add the bread cubes into the skillet. Gently toss and fold the bread with the vegetable mixture on low-medium heat for 2–3 minutes, ensuring the cubes are coated but not mushy.
Turn off heat. Sprinkle fresh cilantro over, toss lightly, and let the bread upma rest in the pan for 2 minutes before serving warm.
