Cauliflower Poriyal is a flavorful Indian vegetable preparation that celebrates fresh, seasonal produce with bold spices. This healthy vegetarian dish is perfect for family dinners, DASH diet, and everyday clean eating.
Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Once hot, add mustard seeds and let them crackle for 10–15 seconds.
Add urad dal, curry leaves, and sliced green chilies. Sauté for 30 seconds until the dal turns golden and the leaves are fragrant.
Add finely chopped onion and cook over medium heat, stirring, until translucent, about 3 minutes.
Add cauliflower florets, turmeric, and salt. Increase heat to high and stir-fry for 2 minutes. Then reduce heat to medium-low, cover, and cook for 10–12 minutes, stirring occasionally, until cauliflower is tender but not mushy.
Uncover and stir in shredded coconut. Sauté over medium heat for 2–3 minutes to combine, allowing moisture to evaporate and flavors to meld. Serve warm.
