Cubed eggplant and potato are stir-fried together in a savory sauce for a hearty vegetarian combination. This family-friendly dish is satisfying, budget-friendly, and filling.
Wash and cube the eggplant and potato into 1-inch pieces; finely slice the onion, and mince the garlic and ginger.
Heat 2 tbsp of vegetable oil in a large skillet over medium-high heat. Add the potatoes and cook for 6-8 minutes, stirring occasionally, until lightly browned and just fork-tender.
Add the remaining 1 tbsp of oil, then add the onion and a generous pinch of salt. Sauté for 2 minutes until the onion softens.
Add the cubed eggplant, garlic, and ginger. Stir-fry for 7-8 minutes, adjusting the heat between medium and medium-high so the eggplant softens but doesn't burn. Stir often to ensure even cooking.
Pour in the soy sauce and sprinkle in black pepper, tossing all the vegetables to coat evenly. Continue to stir-fry for 2-3 minutes until the sauce slightly reduces and glazes the vegetables.
Drizzle with sesame oil, toss, and serve hot.
