Using a sharp knife, score the pork skin in a crisscross pattern, being careful not to cut into the meat.
Rub the skin thoroughly with white vinegar and salt, making sure to get into the scored cuts.
Place the pork belly skin-side up on a wire rack over a baking sheet, and refrigerate uncovered for at least 3 hours to dry out the skin.
Preheat your oven to 300°F (150°C). Bake the pork belly for 90 minutes, then increase the temperature to 425°F (220°C) and bake for an additional 20–30 minutes until the skin bubbles and crisps.
