Rich, smoky black bean soup packed with plant-based protein is a healthy, vegetarian-friendly meal full of bold flavors. This family classic supports clean eats and is ideal for a 1200 calorie or calorie deficit plan.
Heat olive oil in a large soup pot over medium heat until shimmering. Add chopped onion, carrot, celery, and bell pepper, and sauté for 6–8 minutes until vegetables begin to soften.
Add minced garlic, cumin, smoked paprika, and oregano to the pot. Stir constantly for 1 minute, letting the spices bloom without burning the garlic.
Add rinsed black beans, vegetable broth, bay leaf, salt, and black pepper. Increase to high heat and bring to a gentle boil.
Reduce heat to low, cover the pot, and simmer for 25 minutes so the flavors meld and the vegetables become tender.
Remove the bay leaf. For a creamier texture, use an immersion blender to partially puree the soup directly in the pot, leaving some beans whole for texture balance. Taste and adjust salt or pepper before serving.
