Preheat your oven to 320°F (160°C) and arrange 4 ramekins in a deep baking dish.
Pour the heavy cream into a saucepan. Split the vanilla bean and scrape the seeds into the cream. Heat gently over medium heat until just steaming, then remove from heat to cool slightly.
In a mixing bowl, whisk the egg yolks, 0.5 cup sugar, and salt until pale and slightly thickened—avoid whipping air into the mixture.
Gradually pour the warm cream (with vanilla) into the yolk mixture while whisking continuously to temper without scrambling.
Strain the custard through a fine sieve and divide evenly among ramekins. Pour hot water into the baking dish until it reaches halfway up the sides of ramekins.
Bake for 35–40 minutes, checking that the centers jiggle slightly when shaken. Remove ramekins from water bath and cool to room temperature, then chill for at least 3 hours.
Before serving, sprinkle 1 tbsp sugar over each chilled custard. Using a kitchen torch, caramelize the sugar with constant motion for even browning until crisp and amber.
