Translucent steamed crystal dumplings with colorful vegetable filling are a dim sum showpiece. A vegetarian, fresh family dish with delicate, clean flavors.
Combine wheat starch and tapioca starch in a heatproof bowl. Gradually pour in boiling water, stirring quickly with a wooden spoon until a sticky, translucent dough begins to form.
Turn the warm dough onto a clean work surface and knead for 3–5 minutes until very smooth and elastic. Cover with a damp towel to prevent drying.
Mix all vegetables—carrots, shiitake mushrooms, baby bok choy, water chestnuts, and snow peas—in a bowl. Sauté the mixture briefly in a nonstick skillet over medium-high heat until just softened, 2–3 minutes. Remove from heat.
Season the vegetable filling with soy sauce, sesame oil, sugar, white pepper, and salt. Toss to combine evenly then let cool to room temperature.
Divide dough into 24 equal pieces. Roll each piece into a ball, then flatten with a rolling pin into thin, round wrappers about 3 inches in diameter.
Place 1 tsp of filling in the center of each wrapper. Fold and pleat the wrapper to seal—pinch edges firmly to secure. Repeat for all dumplings.
Arrange finished dumplings on parchment-lined steamer basket, leaving space between each for expansion. Steam over high heat for 6–7 minutes until wrappers become fully translucent but do not overcook.
Remove the steamer lid at an angle to avoid condensation dripping onto dumplings. Serve hot with soy sauce or chili oil, if desired.
