Hearty Cantonese beef brisket noodle soup with tender, braised beef is a protein-packed comfort bowl. A family favorite with fresh, savory broth.
Trim the beef brisket, cutting it into 2-inch chunks, and blanch in boiling water for 5 minutes to remove impurities. Drain and rinse the meat well.
In a large pot over medium heat, add a splash of oil, then sauté ginger slices and garlic cloves for 1 minute until aromatic.
Add blanched brisket, beef bones, and Shaoxing wine. Sear for 2-3 minutes, stirring occasionally.
Pour in 8 cups of water, soy sauce, oyster sauce, rock sugar, star anise, and salt. Bring to a boil over high heat, skimming any foam, then reduce heat to low and cover. Simmer gently for 2 hours.
Peel and cut the daikon radish into thick rounds. Add to the pot and continue to simmer for 45-60 minutes, until brisket and radish are very tender. Adjust seasoning with salt and white pepper.
Cook egg noodles according to package instructions in a separate pot. Drain noodles and divide among serving bowls.
