Simmered beans served with blistered, charred chiles for a spicy kick. This vegetarian, protein-rich family side adds bold heat and fresh flavor to any Mexican meal.
Heat 1 tablespoon of vegetable oil in a medium skillet over medium heat. Add the sliced jalapeños and cook, stirring occasionally, until charred and blistered on all sides (about 4 minutes). Remove and set aside.
In the same skillet, add the remaining 1 tablespoon of oil. Add chopped onion and sauté over medium heat until translucent and starting to soften, about 3–4 minutes.
Add the cooked pinto beans to the skillet with onions and season with salt and black pepper. Stir well to incorporate the flavors.
Reduce heat to low and simmer beans uncovered for 10–12 minutes, stirring occasionally, until slightly thickened and heated through. Adjust seasoning if needed.
Just before serving, top the beans evenly with the charred jalapeños and drizzle fresh lime juice over the dish for a spicy and citrusy finish.
