Stuffed cuttlefish with breadcrumbs and herbs, braised in tomato sauce. This high protein mediterranean dish is a fresh, family-friendly dinner from coastal Italy that's full of flavor.
Preheat oven to 350°F (175°C). Rinse and pat dry the cleaned cuttlefish, setting tentacles aside for stuffing if desired.
In a mixing bowl, combine breadcrumbs, chopped cuttlefish tentacles (optional), egg, Parmesan, parsley, 1 minced garlic clove, 1 tbsp olive oil, and seasoning with half the salt and pepper. Mix until evenly moistened.
Stuff each cuttlefish with the breadcrumb mixture, packing gently. Secure openings with toothpicks to prevent filling from escaping during cooking.
Heat 2 tbsp olive oil in an oven-safe braising pan over medium heat. Add remaining garlic and sauté for 30 seconds, then add stuffed cuttlefish, browning lightly on both sides for about 2 minutes each.
Pour in white wine to deglaze, scraping the pan, then add crushed tomatoes and remaining seasonings. Cover and braise in the oven for 35 minutes, until cuttlefish are tender and stuffing is heated through. Serve hot, spooning sauce over the top.
