Simple yet deeply flavorful, Rongi Curry is a classic Indian lentil dish loaded with plant-based protein and fiber. This vegetarian staple supports DASH diet, lower cholesterol, and wholesome family eating.
Soak 1 cup black-eyed peas overnight in plenty of water; drain before cooking.
Heat 2 tbsp oil in a heavy pot over medium heat, add cumin seeds and let them sizzle for 20–30 seconds until aromatic.
Add diced onion; sauté on medium heat for 5–7 minutes until golden, stirring occasionally for even browning.
Mix in minced ginger and garlic; cook for 1 minute. Add turmeric, ground coriander, and red chili powder, stirring constantly for 30 seconds to bloom spices.
Stir in chopped tomatoes and salt; cook over medium-high for 5–6 minutes until tomatoes soften and oil begins to separate.
Add soaked black-eyed peas and 3 cups water; bring to a vigorous boil, then reduce heat to low, cover, and simmer 40–50 minutes until peas are tender but not mushy.
Uncover, sprinkle in garam masala, stir well, and simmer uncovered for another 5 minutes to thicken the curry slightly.
Taste and adjust salt. Serve hot, garnished with chopped cilantro.
