Hunan rice noodles with braised pork in a spicy broth make a hearty, protein-rich meal. A family breakfast favorite with fresh chilies and bold flavor.
Soak dried rice noodles in hot water for 20–25 minutes until pliable but not mushy; drain well.
Heat 1 tbsp chili oil in a large pot over medium-high heat. Sear sliced pork shoulder until lightly browned, about 2–3 minutes; remove and set aside.
In the same pot, add ginger and garlic. Stir-fry for 30 seconds on medium heat until fragrant. Add the white parts of green onions and sliced chilies; cook 1 minute.
Add back the pork, stir in Shaoxing wine, then pour in chicken broth. Bring to a gentle boil, reduce to simmer, and cook for 12 minutes to tenderize the pork.
Stir in soy sauce, sugar, salt, and bok choy halves. Simmer 2 more minutes until bok choy softens but remains crisp-tender.
Divide soaked noodles into serving bowls. Ladle hot pork and broth mixture over noodles and garnish with green onion tops and an extra drizzle of chili oil.
