Heat 2 tbsp refined vegetable oil in a large skillet on medium heat until shimmering. Add cumin seeds and let them sizzle for 20 seconds to bloom the flavor.
Add chopped onion, stir often, and sauté on medium heat for 5 minutes until translucent and just beginning to brown.
Stir in minced garlic and fresh ginger; cook for 1 minute, ensuring heat remains medium to avoid burning.
Add chopped tomato, ground coriander, turmeric, chili powder, and salt. Cook, stirring frequently, until tomatoes break down and the mixture forms a thick aromatic masala base (about 4–5 minutes).
