Sweet sugarcane and carrots simmer into a naturally sweet, refreshing broth. This healthy, vegetarian family soup is a traditional Cantonese cooling drink for hot weather.
Rinse all fresh ingredients under cold water. Peel sugarcane and chop into 2-inch pieces; peel carrots and cut into large chunks; cut corn cob into 3-4 sections.
Add sugarcane, carrots, and corn into a large stockpot. Pour in 10 cups of water.
Bring to a rapid boil over high heat, then immediately lower to a simmer and cover with the lid slightly ajar.
Simmer gently for 90 minutes (1.5 hours), checking water level halfway and topping up if necessary to cover all ingredients.
After simmering, add salt and taste; adjust seasoning as preferred. Remove from heat, strain the soup, and discard solids. Serve the clear broth warm or cool.
