Thin toasted pasta noodles simmered in a tomato-chile broth, a Mexican family staple. This vegetarian soup is a healthy, comforting side dish that appears on dinner tables across Mexico.
Heat 2 tbsp olive oil in a medium pot over medium heat. Add the fideo noodles and toast, stirring constantly, until golden brown, about 3–5 minutes.
Blend Roma tomatoes, onion, garlic, dried guajillo chile, and 1 cup of vegetable broth until smooth. Strain the puree for a silky broth.
Pour the tomato-chile puree into the toasted noodles. Cook, stirring, for 2–3 minutes to infuse flavor.
Add the remaining 3 cups of vegetable broth, salt, and pepper. Bring to a gentle boil, then reduce heat to low.
Simmer uncovered for 15–20 minutes, stirring occasionally, until noodles are tender and broth slightly thickened. Taste and adjust seasoning before serving.
