Warm red bean soup dessert is a comforting, naturally sweet traditional treat. A family recipe with smooth, earthy sweetness and soothing warmth.
Rinse dried adzuki beans thoroughly, then soak them in cold water for at least 4 hours or overnight for best texture.
Drain beans, place in a pot with 6 cups of fresh water, and bring to a boil over high heat. Skim any foam that appears.
Reduce heat to a gentle simmer, partially cover, and cook for 60–75 minutes until beans are soft and break easily when pressed.
Add sugar and salt, stirring well to dissolve. Simmer uncovered for another 15–20 minutes, stirring occasionally to prevent sticking.
Drop glutinous rice balls into the soup and cook over medium heat for 4–5 minutes, or until they float. Serve warm.
