Hearty lamb and carrot stew with tender meat and sweet carrots is a warming family meal. A high protein dish with fresh vegetables and bold flavor.
Cut lamb shoulder into 2-inch cubes and pat dry with paper towels.
Heat olive oil in a Dutch oven over medium-high heat. Sear lamb in batches until browned on all sides, about 5 minutes per batch. Remove the lamb and set aside.
Add chopped onion, celery, and carrots to the pot. Sauté over medium heat for 8 minutes, scraping up browned bits from the bottom.
Stir in minced garlic and tomato paste; cook for 1 minute until fragrant. Return lamb to pot and add diced potato.
Pour in beef broth, add bay leaf and fresh thyme. Bring to a simmer, then reduce heat to low and cover. Cook gently for 90 minutes, stirring occasionally.
Remove the lid and season with salt and black pepper. Simmer uncovered for an additional 25 minutes for richer flavor and stew consistency. Remove bay leaf before serving.
