Christmas Eve version of Piedmont's warm anchovy and garlic dip served with winter vegetables. This healthy mediterranean tradition brings the family together around fresh seasonal produce.
Peel and thinly slice the garlic cloves to promote gentle flavor infusion while preventing burning.
Combine olive oil and butter in a small saucepan over very low heat, stirring occasionally until butter melts—but do not allow it to simmer.
Add sliced garlic to the warm oil-butter mixture and cook gently for 10–12 minutes, keeping heat very low to avoid browning. Stir frequently so the garlic softens and infuses the oil.
Add anchovy fillets and stir continuously for 5–7 minutes until they dissolve completely into the mixture, forming a smooth, savory sauce.
Season with sea salt and black pepper, then transfer bagna cauda to a warmed serving bowl or fondue pot. Serve immediately, surrounded by fresh winter vegetables for dipping.
