Sweet alkaline zongzi with golden, jelly-like rice and sugar dip are a simple Dragon Boat treat. A family dessert with unique, chewy texture.
Rinse the glutinous rice thoroughly until water runs clear, then soak in water for 4–6 hours.
Drain the rice, add lye water, and stir until evenly coated—this step gives the rice a golden hue and jelly-like texture.
Wipe bamboo leaves clean, then overlap 2–3 leaves to form a cone; fill halfway with rice, compacting gently with the back of a spoon.
Fold leaves securely over the rice to form a tight pyramid or cylinder, tying with cotton twine to keep shape during boiling.
Place wrapped zongzi in a large pot of boiling water (make sure all are submerged), reduce to medium-low heat and simmer with lid on for 2.5–3 hours; turn zongzi halfway through for even cooking.
Remove carefully, drain, and cool slightly before unwrapping; serve warm or chilled with sugar for dipping.
