A warm bath of anchovies, garlic, and olive oil for dipping fresh seasonal vegetables is Piedmont's communal ritual. This mediterranean fondue is healthy, high protein, and perfect for family gatherings.
Add the sliced garlic and half of the olive oil to a small heavy saucepan. Cook gently over the lowest heat possible, stirring occasionally, ensuring the garlic softens but does not color (about 10–12 minutes).
Add the anchovy fillets to the softened garlic. Stir and cook gently, keeping the heat low, until the anchovies dissolve fully into the oil (about 5 minutes). Do not let the oil simmer or sizzle.
Add the remaining olive oil and the butter. Continue stirring gently over low heat until the butter melts and the mixture is glossy and well blended, about 2–3 minutes.
Season the sauce with freshly ground black pepper. Keep the Bagna Cauda warm either over a candle warmer or in a ceramic fondue pot.
Arrange the seasonal vegetables on a platter. To serve, dip the vegetables into the warm Bagna Cauda, replenishing gently heated sauce as needed to maintain temperature and texture.
