Peel the winter melon, remove seeds, and cut into thin slices for even cooking.
Heat 1 tbsp olive oil in a skillet or wok over medium-high heat until shimmering but not smoking.
Add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn.
Add sliced winter melon and stir-fry for 3–4 minutes, keeping ingredients moving to avoid browning.
Add soy sauce, water, salt, and white pepper; stir well, cover, and steam on medium heat for 3–5 minutes until winter melon just turns translucent and tender.
Uncover, stir quickly to reduce any excess liquid, then remove from heat immediately to prevent overcooking. Serve hot as a side.
