Silky smooth tofu pudding is served warm with a sweet ginger or brown sugar syrup. This beloved Chinese dessert has a delicate, custard-like texture that melts on the tongue.
In a saucepan, whisk together unsweetened soy milk and cornstarch until completely smooth; this creates the base for a creamy pudding.
Add silken tofu to the mixture, gently breaking it apart and stirring over medium-low heat. Maintain gentle heat—avoid boiling to keep the pudding silky.
Continue stirring for 8–10 minutes, until the mixture thickens and coats the back of a spoon. If needed, briefly increase heat to medium but never let it boil.
Pour the thickened pudding into serving bowls and cover lightly to keep warm while you prepare the syrup.
In a separate small pot, combine brown sugar, water, ginger slices, and vanilla extract. Simmer over medium heat for 8 minutes, stirring occasionally until the syrup is aromatic and slightly thickened. Remove ginger slices, then drizzle syrup over the warm tofu pudding before serving.
