Sweet, aromatic, and deeply satisfying, Mutta Mala is a beloved Indian dessert with centuries of tradition. This family celebration staple adds sweetness to festivals, weddings, and everyday moments of joy.
Separate 10 egg yolks from the whites, making sure no whites remain, and lightly beat the yolks until smooth but not frothy.
In a wide saucepan, combine 1.5 cups sugar and 2 cups water. Heat over medium flame, stirring until sugar dissolves, then simmer without stirring for 5-6 minutes until it forms a light sugar syrup (one-thread consistency).
Lower the heat to a gentle simmer and stir in the rose water and cardamom powder; maintain the syrup at a barely bubbling state.
Pour the beaten yolks into a clean, narrow-mouthed funnel or piping bag. Steadily drizzle the yolk in thin streams into the simmering syrup, forming delicate lace-like threads—move in a circular motion and do not overlap.
Cook the yolk threads gently for 1-2 minutes or until just set, then use a slotted spoon to carefully lift out the strands, draining excess syrup, and arrange on a plate. Repeat with remaining yolk, reheating syrup if it thickens too much.
Let the Mutta Mala cool completely before serving, optionally spooning extra syrup over the dessert for added sweetness.
