Burfi is a smooth, fudge-like Indian sweet made with condensed milk and premium ingredients. This elegant confection is a treasured gift during Diwali and a centerpiece of family sweet boxes.
Grease an 8x8 inch pan with a little butter and set aside for later.
In a nonstick pan over medium heat, melt the unsalted butter, then add the condensed milk and whole milk powder, stirring constantly to avoid lumps.
Continue cooking on medium-low heat, stirring frequently, until the mixture thickens and begins to leave the sides of the pan, about 10–14 minutes.
Mix in the chopped cashew nuts, cardamom powder, and rose water, and continue to cook for another 2–3 minutes until the mixture turns smooth and glossy.
Immediately transfer the hot mixture to the prepared pan, quickly smoothing the top with a spatula; sprinkle with chopped pistachios and gently press them in.
Allow to cool at room temperature until set (about 45 minutes); then slice into squares before serving.
