Pour the soy milk into a saucepan and heat over medium-low until just simmering, stirring gently to prevent sticking.
While the soy milk warms, dice the firm tofu into small cubes and finely chop the pickled mustard greens.
Add the diced tofu to the hot soy milk and simmer for 3–4 minutes on low heat to infuse flavor without boiling.
Stir in the pickled mustard greens and let cook for another 2 minutes, allowing the tangy notes to blend in.
Turn off the heat. Stir in light soy sauce, sesame oil, and white pepper. Ladle into bowls and top with freshly chopped scallions before serving.
