Creamy taro milk tea with purple color and sweet, earthy flavor is a popular drink. A fun family beverage with fresh, natural taro taste.
Place diced taro root in a saucepan and cover with water. Bring to a boil, then reduce to medium and simmer for 12–15 minutes, until fork-tender.
Drain the taro, transfer to a blender with whole milk, 3 tbsp sugar, and vanilla extract. Blend until completely smooth and creamy.
Steep black tea bags in 1 cup of just-boiled water for 5–7 minutes for a strong brew, then cool to room temperature.
Prepare tapioca pearls per package directions: boil water, add pearls, cook until chewy (usually 3–5 minutes), then drain and toss with honey and remaining 1 tbsp sugar to keep them soft.
To assemble, layer a quarter of the boba pearls into each glass. Add ice cubes, pour over the taro milk, then top with cooled tea. Stir well before drinking.
