Italian sausages seared with sweet peppers in tomato sauce is a classic southern combination. This high protein mediterranean dish is perfect for family dinners and freezer meal prep.
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sausages and sear for 3–4 minutes per side, until well browned but not fully cooked. Transfer to a plate.
In the same skillet, add the remaining olive oil. Add sliced onion and bell peppers; sauté over medium-high heat for 5–7 minutes until softened and lightly caramelized.
Stir in minced garlic and cook for 30 seconds, stirring constantly to prevent burning.
Add the crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes. Mix well, scraping up any browned bits from the pan.
Nestle the browned sausages back into the sauce and vegetables. Cover, reduce heat to low, and simmer gently for 20–25 minutes until sausages are completely cooked through and sauce is thickened.
Uncover for the last 5 minutes to allow excess moisture to evaporate if desired. Serve hot with your choice of side or allow to cool for freezer meal prep.
