New Year's Day menudo is Mexico's legendary hangover cure and celebration soup. This high protein, healthy, family tradition is a fresh, warming bowl to welcome the new year.
Rinse the beef tripe and beef foot thoroughly under cold water, then cut the tripe into 1-inch pieces.
Place tripe, beef foot, onion, garlic, and bay leaves in a large stockpot. Cover with water and bring to a boil over high heat.
Reduce heat to low, skim any foam, and let simmer for 3 hours, stirring occasionally to maintain even heat.
While the soup simmers, remove stems and seeds from dried guajillo chiles, then soak in hot water for 20 minutes and blend with 1 cup broth from the pot until smooth.
Add blended chile mixture, drained hominy, oregano, salt, and pepper to the soup pot. Simmer for another hour, adjusting seasoning and ensuring hominy is tender.
Remove the beef foot and bay leaves, taste for salt, then serve hot with chopped onion, extra oregano, or lime on the side.
