Grilled bread rubbed with garlic and piled with fresh diced tomatoes and basil is Italy's simplest appetizer. This vegetarian mediterranean starter is fresh, healthy, and a must at every family table.
Preheat a grill pan or broiler to medium-high heat.
Slice the bread loaf into 3/4-inch thick slices and grill each side for 2–3 minutes until lightly golden and crisp.
While warm, rub one side of each bread slice with the cut side of a peeled garlic clove for aroma.
Dice the tomatoes and place them in a bowl. Add chopped basil, 2 tbsp olive oil, sea salt, and black pepper; gently toss to combine.
Spoon the tomato mixture generously over each grilled bread slice just before serving to keep the bread crisp.
