In a large mixing bowl, combine mashed pumpkin, eggs, milk, and vanilla extract. Stir until well blended.
In a separate bowl, whisk together flour, baking powder, sugar, salt, cinnamon, and nutmeg to ensure even distribution.
Gradually fold the dry ingredients into the pumpkin mixture, mixing gently until just combined; avoid overmixing for a tender texture.
Preheat a large nonstick skillet over medium heat. Add 1 tbsp vegetable oil and swirl to coat. Drop ¼ cup portions of batter onto the skillet, spreading slightly.
Cook each pumpkin cake 2–3 minutes per side, adjusting heat as needed to prevent burning, until edges appear dry and both sides are golden and crisp.
