No-bake peanut butter oat bars that are dense, chewy, and packed with calories. Three ingredients, one pan, a week's worth of high calorie snacking.
Line an 8x8-inch baking pan with parchment paper, letting excess hang over the sides for easy removal later.
In a medium saucepan, combine peanut butter, honey, vanilla extract, and salt. Warm gently over low heat, stirring constantly until the mixture is smooth and loose—do not allow to simmer or boil.
Remove the pan from heat and immediately stir in the rolled oats. Mix thoroughly until the oats are evenly coated and the mixture starts to thicken.
Transfer the oat mixture to the prepared pan and firmly press into an even layer using a spatula or the back of a spoon. Push down hard to compact for dense bars.
Cover and refrigerate for at least 2 hours or until firm and set. Use the parchment to lift the bars out, slice into 8 pieces, and serve chilled.
