Vercelli's hearty rice dish with borlotti beans and salami is northern Italian soul food. This high protein mediterranean family meal is deeply satisfying and rooted in Piedmontese tradition.
Heat the olive oil in a large heavy-bottomed pot over medium heat. Add diced onion, celery, and carrot; sauté for 5–7 minutes until vegetables are soft and fragrant.
Add the cubed salami to the pot and continue to cook over medium heat for 3 minutes, stirring frequently to gently render some fat and deepen the flavors.
Stir in the Arborio rice and toast it for 2 minutes over medium–high heat, stirring constantly until each grain is well coated in oil.
Pour in one cup of chicken stock and stir continuously, maintaining a lively simmer (not boiling). Allow the liquid to absorb before adding the next cup, repeating until about half the stock remains.
Add the cooked borlotti beans and season with salt and black pepper. Continue gradually adding the rest of the chicken stock, stirring after each addition and monitoring for desired creaminess, about 20–25 more minutes.
Taste and adjust seasoning, ensuring the rice is tender but al dente and the mixture is moist, not soupy. Remove from heat, let rest 2 minutes, and sprinkle with fresh parsley just before serving.
