Sprinkle the unflavored gelatin over 1/2 cup of whole milk in a small bowl, letting it bloom for 5 minutes until softened.
In a saucepan, combine the remaining whole milk, evaporated milk, and cajeta. Heat gently over medium-low, stirring frequently, until cajeta is fully dissolved and mixture is steaming—do not allow to boil.
Stir in the bloomed gelatin to the warm milk mixture, whisking thoroughly until fully dissolved and smooth. Add vanilla extract and a pinch of salt; mix well.
Remove from heat and allow the mixture to cool slightly for 5–10 minutes without letting it set. Pour into gelatin molds or a baking dish, passing through a fine-mesh sieve if desired for extra smoothness.
Refrigerate for at least 2 hours, or until fully set. Once firm, unmold onto plates and serve chilled for the best texture and flavor.
