A regal pork crown roast filled with sweet apple stuffing is a high protein, impressive family holiday centerpiece. This stunning dish combines tender pork with festive autumn flavors.
Preheat your oven to 375°F (190°C) and set a rack in the lower third position.
Heat olive oil and 2 tbsp butter in a large skillet over medium heat. Add onions and celery, sauté until softened but not browned, about 6–8 minutes.
Add apples, thyme, and sage to the skillet. Cook for 2–3 minutes, then transfer mixture to a large bowl with bread cubes.
Whisk eggs with chicken broth and pour over bread mixture, tossing gently to moisten. Season with 1 tsp salt and ½ tsp black pepper. Let stand 10 minutes for flavors to blend.
Pat pork crown roast dry with paper towels. Rub all over with remaining salt, pepper, and 2 tbsp butter. Arrange roast bone tips up in a roasting pan.
Fill the center cavity tightly with apple stuffing, mounding slightly. Tent stuffing with foil to prevent drying.
Roast for 2½ to 3 hours, or until an instant-read thermometer inserted into the thickest part of the pork (not touching bone or stuffing) reads 145°F. Baste pork with pan juices every 40 minutes.
Remove foil during the last 20 minutes of roasting for a golden top on stuffing. Let rest at least 20 minutes before carving, tented loosely with foil.
Slice between bones to serve, making sure each portion has plenty of juicy pork and stuffing.
