Deep-fried whole artichokes, Jewish-Roman style, are spectacularly crispy. This vegetarian mediterranean dish is a fresh, iconic family appetizer from Rome's ancient culinary tradition.
Trim the outer leaves from each artichoke, keep the stem intact, and cut off the tough tips. Immediately rub the cut surfaces with lemon to prevent browning.
Fill a large bowl with water and squeeze the lemon into it, then place the trimmed artichokes in the acidulated water for 15 minutes to soak.
Pat artichokes dry thoroughly with paper towels, spreading the leaves gently to expose the inner surface.
Heat olive oil in a deep pot to 350°F (medium-high); carefully lower artichokes stem-side up and fry for 10–12 minutes, turning occasionally for even browning.
Once artichokes are golden and crisp, transfer to paper towels, season immediately with kosher salt and black pepper, then gently open leaves wider for maximum crispness. Serve hot.
