Start your day with Semiya Upma, a traditional Indian breakfast that's light, nutritious, and satisfying. This healthy vegetarian dish is family-friendly and works well for calorie deficit and clean eating goals.
Heat 1 tbsp oil in a nonstick skillet over medium heat. Add cashews and toast, stirring frequently, for 2–3 minutes until golden. Remove and set aside.
In the same skillet, add the remaining 1 tbsp oil. Add mustard seeds and allow them to splutter, then stir in cumin seeds, green chili, grated ginger, and curry leaves. Sauté for 30 seconds until aromatic.
Add chopped onion and cook over medium heat until translucent, about 3–4 minutes. Stir in carrots and green peas, cooking for another 2 minutes.
Pour in the dry semiya (vermicelli). Stir and roast on medium-low for 2–3 minutes, ensuring all strands are lightly golden for a toasty flavor.
Add 3 cups water and salt. Mix, increase heat to bring to a boil, then reduce to low. Cover and simmer for 6–8 minutes, stirring once, until semiya is cooked and water is mostly absorbed.
Turn off the heat and let the upma sit covered for 3 minutes for the texture to set. Fluff gently with a fork and top with toasted cashews before serving.
