This wrap brought back so many memories from 2014! The crispy tenders are perfectly seasoned with a satisfying crunch, wrapped in a soft flour tortilla with fresh lettuce, tomato, and that signature creamy pepper mayo.
Marinate the chicken tenders in buttermilk for at least 30 minutes (up to 3 hours for juiciness). The buttermilk brine keeps the meat moist, just like KFC.
In a large bowl, whisk together the flour, cornstarch, and all 11 herbs & spices (salt, black pepper, paprika, garlic salt, celery salt, dry mustard, ground ginger, dried basil, dried oregano, MSG, and white pepper). This blend is KFC’s legendary flavor base.
Beat the eggs in a separate shallow dish. Dip each marinated tender first in the seasoned flour blend, then into the beaten eggs, and again in the seasoned flour, pressing to adhere—the double breading is the secret to KFC’s extra crunch.
Heat oil to 340–350°F in a Dutch oven or deep skillet with a lid partially covering to simulate pressure frying. Fry tenders in batches for 6–7 minutes until deeply golden; internal temp should be 165°F. Drain well on a wire rack for crispness.
For Pepper Mayo: Mix mayonnaise, lemon juice, coarse black pepper, and sugar. This creamy, peppery sauce is essential for the Twister’s classic taste.
To assemble: Warm tortillas. Spread each with 2 tbsp pepper mayo, layer with lettuce, tomato slices, and 2–3 crispy chicken tenders. Roll up tightly and slice in half if desired.
