Roast the Roma tomatoes, serrano chiles, garlic cloves, and onion halves in a dry skillet over medium-high heat, turning occasionally until lightly charred and softened, about 8 minutes.
Transfer the roasted vegetables to a blender and blend until smooth. Season with 0.5 tsp salt and set aside.
In a large nonstick skillet, heat olive oil over medium heat. Pour in the blended sauce and simmer, stirring, for 8-10 minutes to thicken. Taste and add black pepper if needed.
