Meaty country-style pork ribs braised until fall-apart tender are a rustic, carnivore-approved family dinner. Slow-cooked to perfection, these high protein ribs are rich and deeply satisfying.
Preheat the oven to 300°F and position a rack in the lower third. Pat ribs dry, then season all sides evenly with the kosher salt, black pepper, smoked paprika, and chili powder.
Heat a large Dutch oven over medium-high heat. Sear the seasoned ribs in batches, turning occasionally, until deeply browned on all sides—about 8 minutes total. Remove and set aside.
Reduce heat to medium. Add sliced onion to the pot and sauté until softened and golden, 4–5 minutes. Add minced garlic and cook for 1 more minute, being careful not to burn.
Stir in brown sugar and apple cider vinegar, scraping up any browned bits from the pan bottom. Pour in chicken broth to deglaze completely.
Return the seared ribs and any juices to the pot, nestling them into the liquid. Cover tightly and braise in the oven for 2.5–3 hours, or until the pork is fall-apart tender and easily shredded with a fork.
