Paneer Dosa is a crispy South Indian crepe made from fermented rice and lentil batter, served with chutney and sambhar. This popular vegetarian dish is naturally high in protein from fermentation and a beloved family breakfast.
Heat 1 tbsp oil in a skillet over medium heat; add cumin seeds, let them crackle, then add onions and sauté for 2-3 minutes until translucent.
Add tomatoes and bell pepper with turmeric and red chili powder; cook for 3-4 minutes until vegetables soften and moisture evaporates.
Stir in crumbled paneer and salt; cook mixture for 2 more minutes on medium heat, stirring well to combine flavors. Finish with chopped cilantro and set aside.
Heat a nonstick or cast iron pan over medium-high heat. Pour a ladleful of dosa batter at the center and quickly spread into a thin, even circle using the back of the ladle.
Drizzle a little oil around the edges. Cook on medium-high until the bottom turns golden and crisp (2-3 minutes), then lower heat, spread 1/4 of the paneer mixture over half of the dosa, and fold.
Gently press with a spatula and cook another minute for extra crispness. Slide onto a plate and serve hot. Repeat with remaining batter and filling.
