Tender turkey meatball subs smothered in marinara and melted mozzarella are a lighter, high protein twist on the classic. A family-friendly sandwich that satisfies big appetites.
Preheat oven to 400°F. Line a baking sheet with parchment for easy cleanup and crisp meatball bottoms.
In a large bowl, gently mix ground turkey, breadcrumbs, milk, egg, garlic powder, dried oregano, salt, and pepper until evenly combined. Avoid overmixing, which can toughen the meatballs.
Shape mixture into 16 meatballs. Arrange spaced apart on the prepared sheet. Bake for 15 minutes until barely golden and cooked through (165°F in center).
Meanwhile, warm marinara sauce in a saucepan over medium heat. Once meatballs are done, gently nestle them into the sauce and simmer 3 minutes to marry flavors.
Slice sub rolls, place meatballs and sauce inside, and top with mozzarella. Broil subs on a pan 2–3 minutes until cheese is bubbling and rolls are lightly toasted. Serve immediately.
