Gond Ladoo is a classic Indian sweet made by shaping flavored dough into round, bite-sized treats. This beloved dessert is a staple at festivals, weddings, and family celebrations across India.
Heat 1/2 cup of ghee in a heavy-bottomed pan over medium flame. Once hot, add gond in batches and fry until the pieces puff up and turn crisp. Remove and set aside.
To the same pan, add remaining ghee and reduce the heat to low. Add wheat flour and roast, stirring constantly, until it turns golden brown and releases a nutty aroma (about 12-15 minutes).
Add the chopped almonds and cashews to the flour and sauté gently for 2 minutes.
Turn off the heat and let the mixture cool slightly for 5 minutes. Add fried gond, breaking it up by hand for a crunchy texture.
Mix in powdered sugar, cardamom, and nutmeg. While the mixture is still warm but manageable, shape it into small, firm round ladoos by pressing tightly between your palms.
