Line an 8-inch square baking pan with parchment paper, ensuring it covers the bottom and sides for easy removal.
In a small saucepan over medium heat, melt the unsalted butter. Add honey and stir continuously until well combined and bubbling gently.
Add osmanthus flowers and a pinch of fine sea salt. Monitor heat to keep the mixture at a low boil without scorching; cook for 12–15 minutes, stirring frequently.
Once the mixture thickens and reaches 240°F on a candy thermometer (soft ball stage), remove from heat immediately and stir in lemon juice for brightness.
Pour the hot mixture into the prepared pan, smoothing the surface. Allow to cool fully at room temperature before cutting into candies with a sharp knife.
